- 1 mashed, ripe banana
- 2 eggs
- Peanut butter
- Add your banana and two eggs to a blender and blend until smooth. Alternatively, mash your banana with a fork and in another bowl whisk eggs before mixing together.
- Put the coconut oil in the pan on low-medium heat, pour about 1/4 cup for each pancake into the pan.
- Cook until pancakes are golden brown on both sides.
- Enjoy with the toppings of your choice!
