Two Ingredient Banana Pancakes

Breakfast can be a really difficult meal to plan, whether time is against you or you fancy a treat on the weekend, these pancakes are always a fail safe, healthy and protein rich option that will set you up for the day.

I love the fact that you can literally whip them up with two ingredients, plus it’s a great way to use up overripe bananas.

  • 1 mashed, ripe banana
  • 2 eggs

Optional toppings

  • Berries
  • Syrup
  • Peanut butter


  1. Add your banana and two eggs to a blender and blend until smooth. Alternatively, mash your banana with a fork and in another bowl whisk eggs before mixing together.
  2. Put the coconut oil in the pan on low-medium heat, pour about 1/4 cup for each pancake into the pan.
  3. Cook until pancakes are golden brown on both sides.
  4. Enjoy with the toppings of your choice!
